Ingredients:

  • Bread (white, whole wheat, or your choice) 8 slices
  • Cucumber slices
  • Eggs 4 large
  • Lettuce leaves
  • Mayonnaise 2-3 tablespoons
  • Red onion rings (optional)
  • Salt and pepper to taste
  • Tomato slices

Recipe:

Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and simmer for 9-12 minutes, depending on your desired yolk consistency (9 minutes for a slightly soft center or up to 12 minutes for a firmer yolk). Remove the eggs and place them in a bowl of ice water to cool. Once cooled, peel the eggs and finely chop them.

In another bowl, combine the chopped eggs, and mayonnaise.

Now, season with salt and pepper, and mix until the ingredients are well combined. Adjust the mayonnaise to achieve your desired creaminess.

Now lay out 4 slices of bread. Place a lettuce leaf on each slice to create a bed for the egg salad. Add a generous scoop of the egg salad mixture on top of the lettuce. Add tomato slices, cucumber slices, and red onion rings on top of the egg salad.




Then top each sandwich with another slice of bread to create a sandwich. Optionally, you can remove the crusts from the bread or leave them on, depending on your preference. Cut the sandwiches into halves or quarters for easier serving.
