Dal Kachori is a well known snack produced using a firm, flaky pastry loaded up with a flavored lentil (dal) combination. Here is a recipe to make tasty Dal Kachori:

- Yellow lentil 1 Cup (soaked & boiled)
- Plain paratha 10-12
- Cooking oil 2-3 tbs
- Cumin seeds 1/2 tbs
- Fennel seeds crushed 1 tsp
- Red chili powder 1/2 tbs or to taste
- Coriander seeds crushed 1 tbs
- Garlic chopped 1 tbs
- Green chili finely chopped 2 tbs
- Gram flour 4-5 tbs
- Chaat masala 1 tsp
- Salt 1 tsp or to taste
- Turmeric powder 1/2 tsp
- Fresh coriander chopped 2 tbs
- Cooking oil for frying
In a cooking wok, add cooking oil, cumin seeds, fennel seeds, coriander seeds, garlic and mix well for a minute. Add green chili and mix well. Add chaat masala, red chili powder, salt and turmeric powder, mix well and cook for 1 minute. Add gram flour, mix well and cook for 2-3 minutes. Add boiled yellow lentil, fresh coriander, mix well and cook for 2-3 minutes. Let it cool. Sprinkle dry flour on working surface, place plain paratha and fold all four sides to make a square shape. Add prepared lentil filling (2 tbs) then fold and seal all the edges to make a kachori (makes 10-12).
In another cooking wok, heat cooking oil and fry kachori on medium low
flame until crispy and golden brown.
Serve the dal kachori hot with mint chutney or tamarind chutney. Partake in your hand crafted, firm, and delightful Dal Kachori as a bite 😋
